I know phyllo dough is extremely delicate, and you will say, “I think we should order this from a bakery instead of making it at home.” Just like me, I also thought that we should buy this from a bakery, but when I made this, it was simple, and I did not expect it. Trust me, Crinkle Cake will change your mind.

The dessert that is just like a bakery or inspired, that is simple and you can try this at home for your dessert table or when you are craving something sweet. It's buttery, sweet, and has rich custard that melts right into layers of golden phyllo.

Perfect for making this for guests, special occasions, or just craving a sweet and rich dessert. This recipe is the kind of dessert that is fancy but easy to make, and I love that.

Ingredients

  • Phyllo Dough
  • Butter
  • Milk
  • Sugar
  • Eggs
  • Vanilla Extract

For the Simple Syrup:

  • Water
  • Sugar
  • Lemon Juice

Optional Toppings:

  • Pistachios
  • Pistachio Paste
  • Rose Petals

Instructions

  1. Step 1: Brush melted butter on a tray and layer 2 sheets of phyllo at a time, crinkling them as you go to fill the tray.
  1. Step 2: For a thicker cake, add a second layer of phyllo. Bake 10 minutes at 350°F, pour over more butter, then bake another 10 minutes.
  1. Step 3: Mix milk, sugar, eggs, and vanilla, pour over the baked phyllo, and bake 30–35 minutes until set.
  1. Step 4: Make the syrup with sugar, water, and lemon. Pour over the cake and finish with pistachios, pistachio paste, and rose petals.

Variations

  • Honey: replace the sugar syrup with about 3 tablespoons of honey for a richer, natural sweetness.
  • Nutty Crunch: Instead of pistachios, almonds or walnuts have extra crunch.
  • Extra Sweet: Add extra pistachio paste or some melted chocolate on top to have extra sweetness in the dessert.

Yields: 8–10 servings

  • Phyllo dough
  • 1 cup melted butter
  • 1 cup milk
  • 1 cup sugar
  • 2 eggs, room temperature
  • 1 tsp vanilla extract

Simple Syrup:

  • 1 cup water
  • 1 cup sugar
  • 1 tsp lemon juice

Optional Toppings:

  • Rose petals
  • Honey (about 3 tbsp, as a variation for syrup)

Instructions

  1. In a tray, brush your melted butter at the bottom and start to layer your phyllo sheets, grabbing 2 sheets at a time and creating a crinkled pattern and filling your tray.
  2. If you want it thicker, create a second layer of phyllo sheets. Bake for 10 minutes at 350F and then pour over melted butter and back in the oven to bake for another 10 minutes.
  3. While it’s baking in a bowl mix your milk, sugar, eggs and vanilla in a bowl until combined.
  4. Pour over your phyllo sheets and back in the oven one last time for about 30-35 minutes.
  5. In the meantime, prepare your simple syrup by bringing sugar and water to a bowl and adding a squeeze of lemon.
  6. Once your crinkle cake is finished, pour over the simple syrup and top it off with pistachios, a drizzle of pistachio paste, and rose petals.
