Instructions

  1. Step 1: Cook the ground beef in a large skillet over medium-high heat until browned and fully cooked. Drain excess grease if needed. Stir in the taco seasoning and tomato paste and simmer for 2-3 minutes.

Instructions

  2. Stir in the taco seasoning and tomato paste. Simmer for 2-3 minutes until the beef is well coated and the liquid has reduced.
  3. Wipe out the skillet if necessary and return it to medium heat. Lightly coat with cooking spray or a small amount of oil.
  4. Place a flour tortilla in the skillet and sprinkle one half with shredded cheese. Add a layer of seasoned beef on top of the cheese, then sprinkle with a little more cheese.
  5. Fold the tortilla in half and cook for 2-3 minutes per side, pressing gently with a spatula, until the tortilla is crispy and golden brown and the cheese is melted.
  6. Repeat with the remaining tortillas, adding more cooking spray or oil as needed.
  7. Serve immediately with your favorite toppings such as sour cream, salsa, guacamole, pico de gallo, or fresh cilantro.
