Ingredients

  • Medjool Dates
  • Chia seeds
  • Honey
  • Pistachio butter
  • Tahini
  • Unshelled pistachios
  • Cocoa powder
  • Coconut oil
  • Dark or milk chocolate
  • Pinch of sea salt

Instructions

  1. Step 1: In a blender, add pitted dates, chia seeds, honey, pistachio butter, tahini, cocoa powder, and pistachios. Blend until sticky and well combined.
  1. Step 2: Line a baking sheet (8x8) with parchment paper and press the mixture firmly, smoothing the top.
  1. Step 3: Melt the chocolate and coconut oil in the microwave until smooth, then pour over and spread evenly. Sprinkle sea salt and drizzle pistachio butter if desired.
  1. Step 4: Refrigerate for 1–2 hours until firm. Slice into bars and enjoy.

Storage Tips

Store the bars in an airtight container in the refrigerator for up to 1 week. They can also be frozen for up to 2 months, just thaw before serving.

Delicious no-bake date bars that are soft, chewy, and naturally sweet. Perfect as a healthy snack, dessert, or treat with tea, coffee, or smoothies.

Prep Time: 10 minutes

Total Time: 2 hours 10 minutes (Chill Time: 1–2 hours)

Yields: 8–12 bars

  • 2 cups of pitted Medjool Dates (about 10-15 pieces)
  • 1tbsp chia seeds
  • 1tsp honey
  • 1tbsp pistachio butter
  • 1tsp tahini
  • 3⁄4 cup of unshelled pistachios
  • 1tbsp cocoa powder
  • 1tsp coconut oil
  • 8oz dark or milk chocolate
  • Pinch of sea salt

Instructions

  1. In a blender, add pitted dates, chia seeds, honey, pistachio butter, tahini, cocoa powder, and pistachios to a food processor. Blend until the mixture becomes sticky and well combined.
  2. Line a baking sheet (8x8) with parchment paper and press the mixture firmly into the lined pan, smoothing the top evenly.
  3. Gently melt the chocolate and coconut oil in the microwave for 30-second intervals until smooth, then pour over the pressed mixture and spread evenly.
  4. Sprinkle a pinch of sea salt over the chocolate layer. Optional, but drizzle a little bit of pistachio butter on top and swirl with chocolate to create a nice design.
  5. Refrigerate for at least 1–2 hours, or until firm.
  6. Slice into bars and enjoy.
