Chebakia Matcha Latte

In Morocco, Chebakia is especially popular during Ramadan, and this recipe takes that beloved sweet honey, sesame, and warm spices. And blends it with creamy matcha for a fresh, modern twist.

The gentle sweetness of Chebakia complements the earthy flavor of matcha, making every sip smooth and comforting. It’s perfect for Ramadan evenings or as a refreshing treat during the summer months

Inspired by the Chebakia Iced Latte on my blog, thus drink pairs beautifully with Olive Oil & Lemon Cheesecake. I love how simple iced lattes are, yet they can take on so many variations. This Chebakia version is definitely one of my favorites.

Ingredients

Chebakia Syrup:

  • Honey
  • Water
  • Orange blossom water
  • Cinnamon
  • Ground anise (optional)
  • Sesame seeds (crushed lightly)

Chebakia Cold Foam:

  • Heavy cream
  • Orange blossom water
  • Honey

Matcha Latte:

  • Matcha
  • Warm water
  • Milk (whole milk works best)
  • Chebakia syrup
  • Ice
  • Garnish: chebakia, drizzle of honey or sesame seeds

Chebakia Matcha Latte

Yields: 1 cup

Chebakia Syrup

  • 1 tbsp honey

  • 1 tbsp water

  • 1/4 tbsp orange blossom water

  • Pinch of cinnamon

  • Pinch of ground anise (optional)

  • Pinch of sesame seeds (lightly crushed)

Chebakia Cold Foam

  • 1/4 cup heavy cream

  • 1/2 tsp orange blossom water

  • 1 tbsp honey

Matcha Latte

  • 4 grams of matcha

  • 2 oz warm water

  • 3/4 cup milk (whole milk works best)

  • 1 tbsp chebakia syrup

  • Ice

  • Garnish: chebakia, drizzle of honey, or sesame seeds

Instructions

  1. Mix hot water with warm honey, then add orange blossom water, cinnamon, anise, and sesame. Stir and let it sit for 2 minutes.

  2. Whisk matcha with warm water until smooth.

  3. In a small bowl, add heavy cream, orange blossom water, and honey; froth until it reaches cold foam consistency (not too thick, not too runny).

  4. In a glass, add syrup and pour in milk.

  5. Add ice and top with whisked matcha.

  6. Garnish with chebakia, a drizzle of honey, or sesame seeds.
