Cheesy Spinach and Chicken Eggrolls

I remember my mom always making eggrolls (briwats) before Ramadan started to get a head start on, so that she wouldn't have to spend hours in the kitchen while fasting. She made the same 2-3 variations every Ramadan, and even though they were delicious, it was time for me to switch it up a little bit. As Moroccans, we love complex flavors and lots of spices in our foods, but I decided to keep it simple and still mouthwatering with Cheesy Spinach and Chicken Egg Rolls, which still bring me back to all those happy memories of making briwats before Ramadan.

The ingredients are easy to find at the store, so you can make them at home too, just like my mom always did. Honestly, nothing beats making these yourself instead of buying them at the store, and the best part is that you can prep them to eat whenever you are craving them. They’re crunchy on the outside, creamy and cheesy on the inside, and packed with flavor.

Every bite reminds me of my mom’s kitchen, and I especially love eating egg rolls with soup; they go perfectly together. It’s not just a snack, it’s a little bite of nostalgia wrapped in a golden and crispy wrapper.

Ingredients

  • chicken breast, chopped into small pieces
  • small onion, diced 
  • olive oil 
  • garlic powder

  • paprika
  • black pepper
  • spinach, chopped 
  • cream cheese, softened
  • mozzarella cheese, shredded 
  • Salt (adjust to taste)
  • Eggroll/spring roll paper
  • Vegetable oil for frying 

Choosing the Right Egg or Spring Roll Wrappers for Cheesy Spinach and Chicken Eggrolls

The wrappers in the photo above are what I use for this recipe; both work well. They gave a crispy crunch and a delicious taste. These types of wrappers are easily found at most international grocery stores and work perfectly for my Cheesy Spinach and Chicken Egg Rolls recipe.

What to serve with Cheesy Spinach and Chicken Eggrolls?

Dipping Sauces

  • Garlic Mayo is creamy and perfect for dipping, while sweet chili sauce adds a little sweetness and spice. Honey mustard is mild and great for kids, and spicy mayo is a good choice if you like extra heat.

Side Dishes

  • A fresh green salad keeps the meal light. Steamed rice or fried rice makes it more filling. Roasted or air-fried vegetables are simple and healthy sides.

Light Pairings

  • Pickled Vegetables help balance the rich cheese. Fresh fruit like mango or pineapple adds a sweet and refreshing taste.

Cheesy Chicken and Spinach Eggrolls

These cheesy spinach and chicken egg rolls taste like a creamy chicken pasta inside an eggroll, and are a fun way to spice up your appetizer rotation.

Prep Time: 30 minutes

Cook Time: 15 minutes

Total Time: 45 minutes

Yields: 15-20 servings

  • 1 lb chicken breast, chopped into small pieces
  • 1 small onion, diced 
  • 2-3tbsp olive oil 
  • ½ tsp garlic powder 
  • ½ tsp onion powder
  • ½ tsp paprika
  • ½ tsp black pepper
  • 2 cups of spinach, chopped 
  • 4oz cream cheese, softened
  • ½ cup of mozzarella cheese, shredded 
  • Salt (adjust to taste)
  • Eggroll/spring roll paper approx 15-20 sheets
  • ½ cup of Vegetable oil for frying

Instructions

  1. Sauté diced onion in olive oil on medium-low heat. Once the onion is translucent, remove it from the pan. Increase the heat to medium and add in diced chicken and spices.  
  2. Add spinach and saute, then add in cream cheese and mozzarella cheese.  Mix until fully combined and creamy.
  3. Place an egg roll wrapper on a flat surface in a diamond shape. Add 1–2 tablespoons of filling near the bottom corner. Fold the bottom over the filling, fold in the sides, then roll tightly. Brush the top edge with beaten egg to seal
  4. Either cook the egg rolls once assembled or store them for later use. Cooking methods below:
  • Fry:  Heat oil to 350°F. Fry egg rolls 2–3 minutes per side until golden and crispy. 
  • Air Fry: Spray egg rolls lightly with oil. Air fry at 380°F for 8–10 minutes, flipping halfway.
  • Bake: Place on a lined baking sheet, brush with oil, and bake at 400°F for 15–18 minutes, flipping once.
