Berry Hibiscus Mocktail

A vibrant, refreshing drink made with chilled hibiscus tea, juicy mixed berries, fresh lemon juice, and sparkling soda. Lightly sweet, beautifully fizzy, and finished with a strawberry sugar rim, it’s perfect for Valentine’s Day or any special occasion.

Prep Time: 10 minutes

Cook Time: 5 minutes (for brewing hibiscus tea, if not already prepared)

Total Time: 15 minutes (plus chilling time for tea)

Yields: 2-3 servings

For the Mocktail:

  • 1 cup brewed hibiscus tea, chilled

  • 1/2 cup mixed berries (strawberries, raspberries, or blackberries)

  • 1–2 tablespoons honey or maple syrup (adjust to taste)

  • Juice of 1/2 lemon

  • 1 cup lemon sparkling soda, chilled

  • Ice

  • Fresh mint and extra berries, for garnish

For the Strawberry Sugar Rim:

  • 2 tablespoons granulated sugar

  • 1 tablespoon freeze-dried strawberries

  • Lemon wedge (for rimming glass)

Instructions

  1. Prepare the Strawberry Sugar Rim (make ahead or while the tea chills)
    • In a small dish, combine the granulated sugar and crushed freeze-dried strawberries. Mix until evenly colored.

    • Cut a lemon wedge. Rub the rim of each glass with the lemon wedge to moisten.

    • Dip each rim into the strawberry sugar mixture, turning gently to coat evenly.

  2. Create the Base and Balance the Flavor

    • In a glass, add:

      • 1/2 cup mixed berries

      • 1–2 tablespoons honey or maple syrup (start with 1 tablespoon and adjust to taste)

      • Juice of 1/2 lemon

    • Gently muddle the berries just enough to release their juices without fully mashing them.

    • For a smoother drink, lightly muddle and strain before building the mocktail.

  3. Build the Mocktail

    • Fill each rimmed glass with ice.

    • Add 1 cup chilled hibiscus tea to the muddled berry mixture.

    • Pour the hibiscus-berry mixture evenly into the prepared glasses.

    • Top each glass with chilled lemon sparkling soda.

    • Gently stir to combine while keeping the fizz intact.

  4. Garnish and Serve

    • Garnish with a sprig of fresh mint and a few extra berries.
