What Is Algerian Borek?
Algerian borek, also known as bourek, is a thin pastry filled with beef and cheese. It's an easy recipe for a delicious dish that goes very well with soup.
Ingredients for Algerian Borek
- diced onion
- ground beef
- cinnamon
- black pepper
- Salt to taste
- chopped parsley
- potatoes
- Salt and pepper (for potatoes)
- soft cheese (Laughing Cow) or mozzarella cheese
- Spring roll or egg roll paper
How to Prepare the Borek Filling
Heat a pan over medium heat and cook the diced onion until soft. Add the ground beef and cook until browned, breaking it up as it cooks.
Season the meat with cinnamon, black pepper, and salt, then mix well. Remove from heat.
In another pan with boiling water, add the diced potatoes to boil until they're soft.
Add parsley into the meat mixture
Once the potatoes are done, drain and mash them up and add some salt and pepper.

How to Assemble Algerian Borek
Place one egg roll wrapper on a clean surface. Spoon some filling near the bottom of the wrapper, then add mashed potato mixture and some beef mixture and you can use soft cheese that this recipe do traditionally or you can use just shredded cheese.
Fold the sides in, then roll it up tightly into a log and seal it with water. Repeat until all the filling is used.
Frying Algerian Borek
Heat vegetable oil in a deep pan. Fry the borek rolls in batches until they are golden brown and crispy on all sides.
Remove from the oil and place on paper towels to drain any extra oil.
Serving Suggestions
Serve Algerian borek hot for the best taste and crunch. It goes well with some Harira, Shorba or soup that you like. Borek is a popular starter during Ramadan, but it also works great as a snack or appetizer.

Choosing the Right Spring Roll Paper for Algerian Borek
The right wrapper is thin, soft, and flexible when dry, and it turns crispy when fried. The image above shows the exact type of spring roll paper you need, making it easier to choose the right one when shopping.
