If you’re looking for an easy high-protein meal, these beef bowls are a great choice. They’re made with roasted sweet potatoes, taco-seasoned ground beef, creamy cottage cheese, and fresh avocado, drizzled with hot honey on top, giving a sweet-and-spicy flavor that makes the dish savory. Ingredients

  • Onion
  • Ground beef
  • Tomato paste
  • Sweet potatoes
  • Avocado
  • Cottage cheese 
  • Taco Seasoning: paprika, smoked paprika, cumin, chili powder, salt, pepper, oregano, and garlic powder
  • Paprika
  • Salt and pepper to taste 
  • Hot honey 
  • Crushed red pepper

Oven or Air Fryer?

  • Oven: 425°F for 25–35 minutes
  • Air fryer: 380°F for 20 minutes

You can cook the sweet potatoes in the oven or air fryer, depending on what you prefer. For the oven, roast them at 425°F for 25–35 minutes and toss them halfway through until they are tender and lightly browned. For the air fryer, cook them at 380°F for about 20 minutes and toss the basket halfway through.

Variations

  • Make it spicier: Add extra crushed red pepper to the beef or drizzle more hot honey over the finished bowl for more heat.
  • Adjust the taco seasoning: Use your favorite taco seasoning instead of the homemade blend, as suggested in the original recipe.
  • Air-fry the sweet potatoes: Instead of roasting them in the oven, air-fry the sweet potatoes at 380°F for about 20 minutes, tossing the basket halfway through.

Total Time: 25 minutes

Yields: 4 servings

  • 1 onion, diced 
  • 1 lb ground beef
  • 1tbsp tomato paste
  • 4 sweet potatoes, cubed 
  • 2 avocados, sliced 
  • 2 cups of cottage cheese 
  • Taco Seasoning: paprika, smoked paprika, cumin, chili powder, salt, pepper, oregano, and garlic powder
  • 1tsp Paprika, 
  • Salt and pepper to taste 
  • Hot honey 
  • Crushed red pepper 

Instructions

  1. Wash and dice the sweet potatoes into bite-sized pieces. Toss with olive oil, paprika, salt, and pepper. Roast at 425°F for 25–35 minutes, tossing halfway through, until tender and lightly browned. Or air fry on the roast setting at 380 for 20 minutes, tossing the basket halfway.
  2. Heat a large skillet over medium-high heat. Add a neutral oil and sauté diced onion until translucent, then add in ground beef and cook until browned, breaking it up as it cooks.
  3. Add my homemade taco seasoning (or any taco seasoning of your choice). Stir well and simmer for 2–3 minutes so the seasoning coats the beef. Add in tomato paste and mix into beef until combined.
  4. Divide the roasted sweet potatoes, seasoned beef, and cottage cheese between 4 bowls.
  5. Slice or dice the avocados and divide them between the bowls.
  6. Drizzle each bowl with hot honey to taste. The sweet heat pairs especially well with the taco-seasoned beef and creamy cottage cheese.
