Moroccan Beef Skewers

When we have gatherings or parties, Moroccan Beef Skewers are the first thing that comes to my mind to make because I want to cook something that is perfect for gatherings, like cooking on the grill. The smell of the spices, the sizzling meat, and everyone gathering around waiting for the first batch always reminds me of family barbecues and especially Eid celebrations. In Morocco, skewers like these are a classic barbecue dish usually prepared alongside kefta, chicken, kidney, or liver, but this one has always been my personal favorite since I was never much of a liver fan.

What I love about this recipe is how simple it is and how flavorful the spices are. The marinade comes with herbs, spices, olive oil, and a little harissa. After marinating, the beef becomes more flavorful and tender, especially once you put it on the grill with charred edges.

When you serve this, it is always the one that easily disappears, especially at gatherings or weeknight dinners. Perfectly served with bread, salads, or just eaten straight from the skewer. While you can bake or air fry them easily, grilling gives them that smoky flavor that makes them taste even more delicious and authentic.

Ingredients

  • Beef stew chunks
  • Parsley/cilantro
  • Red onion
  • Olive oil
  • Salt and pepper
  • Cumin
  • Ginger
  • Paprika
  • Turmeric
  • Harissa (optional)
  • Wooden or metal skewers

Instructions

  1. Step 1: In a bowl, combine beef chunks with parsley, cilantro, red onion, olive oil, and all the spices listed above. Mix until well combined and cover to marinate for at least 2 hours or overnight in the fridge.
  1. Step 2: Before cooking, place meat onto skewers, about 5–6 pieces per skewer, and place on a foil-covered baking sheet.
  1. Step 3: You can choose to bake, air fry, or grill these. For baking, place the oven at 425°F and bake for about 15–20 minutes, flipping midway. For the air fryer, set to 380°F and cook for 15–18 minutes, rotating skewers halfway through.
  1. Step 4: For grilling, the temperature should reach between 400–500°F and only need 8–12 minutes, roasting again halfway through. Enjoy with bread, salads, or on its own!

Hint: For extra flavorful and tender beef skewers, let the meat marinate overnight in the fridge if you have time. If using wooden skewers, soak them in water for at least 30 minutes before grilling so they do not burn too quickly.

Variations

  • Harissa - add extra harissa if you want the skewers to have more spice and heat.
  • Vegetables - add bell peppers or extra onions between the meat for more flavor and color.
  • Serving - serve the skewers with rice, inside sandwiches, or wraps instead of with bread or salads.

Storage

Store leftover Moroccan Beef Skewers in an airtight container in the fridge for up to 3–4 days. Reheat in the oven, air fryer, or on a grill pan until warmed through. You can also freeze the marinated uncooked beef for up to 2 months for an easy future meal.
