Yields: 4-6 servings

  • 2 tbsp butter
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 1½ tsp salt (or to taste)
  • ½ tsp black pepper
  • 1 tsp smoked or regular paprika
  • 1 tsp dried oregano
  • 1 tsp Italian seasoning
  • ½–1 tsp red pepper flakes (optional for heat)
  • ¼ cup sun-dried tomatoes, chopped (oil-packed preferred)
  • 2tsbp tomato paste
  • 6 cups chicken broth
  • 2 cups cooked shredded chicken (rotisserie works great!)
  • 1½ cups gnocchi (or any pasta of your choice)
  • 1/2 cup heavy cream
  • 4oz softened cream cheese
  • ½ cup freshly grated parmesan
  • 2 cups baby spinach

Instructions

  1. Sauté the veggies
    Heat olive oil in a large pot over medium heat. Add onion, carrots, and celery. Cook until softened, 5–7 minutes. Add garlic and sauté for 1 minute.
  2. Build the flavor base
    Stir in salt, pepper, paprika, oregano, Italian seasoning, and red pepper flakes. Add sun-dried tomatoes and tomato paste and cook 1–2 minutes to release flavor.
  3. Add broth + chicken
    Pour in chicken broth and bring to a gentle boil. Add shredded chicken and reduce the heat to a simmer.
  4. Cook the pasta
    Add gnocchi or pasta and simmer until tender (5–10 minutes depending on the shape).
  5. Add creaminess
    Lower the heat and stir in heavy cream, cream cheese and parmesan until melted and smooth.
  6. Finish the soup
    Add spinach and stir until wilted.
  7. Serve warm
    Top with extra parmesan, cracked pepper, or red pepper flakes.
